Are you tired of the peanut butter and jelly syndrome?  Then it’s time to STOP spreading things on bread, buying a slice of pizza, or raiding the snack machine, and START giving yourself the nutritious and delicious lunch you deserve.  Give your taste buds and body something to look forward to that breaks up your day whether you're at work, at home or on the road.

 

If you think that eating a healthy lunch means having to eat salad with grilled chicken every day, I have some news for you…

 

There are other options!

 

Not that there’s anything wrong with salad and chicken—it’s a perfectly healthy lunch.  I personally LOVE a classic grilled chicken salad, but you have to admit, it gets BORING eating the same thing every day for lunch. 

 

But who wants to spend the time looking up new recipe ideas and thinking about what to make that's quick and easy?  It’s too much work and requires too much energy!

 

Well, today I’m taking all the work out of it for you.  No researching or thinking necessary—you just need to go out and get the ingredients.

 

I’m giving you four of my personal favorite recipes from our  “Healthy, Yummy and Easy Recipes” library in our members-only Get Fit Club

 

These recipes are as quick and healthy as you can get!

Goat Cheese and Walnut Salad

 

This simple salad is so easy to make, and it tastes delicious.   This recipe makes 4 servings.  If you only want to make enough for yourself simply cut the recipe by 1/4.  

 

Here's what you need:

1/2 bell pepper

1/2 yellow pepper

6 cups spinach leaves

2 1/4 tsp apple cider vinegar

1/4 tsp dried thyme

salt and lemon pepper to taste

1/4 cup walnuts (preferably raw)

1/4 to 1/2 cup crumbled goat cheese (if you have sensitivities to cow's milk products you may be able to tolerate goat milk products as they are naturally lower in lactose.)

 

Here's what you do:

1. Cut peppers into strips about 1/3 inch in width, and slice in half if too long.

2. Combine with spinach in large bowl.

3. For dressing, whisk oil, vinegar and thyme in small bowl.

4. Toss with bell peppers and spinach and season with salt and pepper.

5. Top with walnuts and goat cheese.

6. Enjoy!

Apple and Avocado Salad

 

This is a recipe I'll make for lunch when I don't have a lot of time to prepare something.  The flavors of the avocado, apple and bacon together are delish!  Of course, if you don't like to eat meat or bacon, you can leave the bacon out and just add more avocado for protein.  I personally LOVE bacon, but I don't eat it every day or every week for that matter, and when I do it eat, I always buy organic, nitrite and nitrate free.  When it comes to pork products I highly recommend buying the higher quality stuff.

 

Here's what you need:

mixed greens 

cherry tomatoes

yellow peppers, sliced

1/4 avocado, sliced

3 pieces of bacon

1/3 green apple, sliced

1 tbsp sunflower seeds

 

Here's what you do:


1. I usually cook the bacon while I'm cutting the veggies and arranging the salad fixings.

2. Top with olive oil and vinegar (I like apple cider and red wine:)

3. Enjoy!

 

Avocado and Quinoa Salad

 

This is a great recipe to make in a large batch to last you a few lunches.  I cook the quinoa ahead of time so assembling the recipe is pretty quick. 

Ingredients: (preferably organic)

2 avocados, sliced

1 cup quinoa

1 medium tomato, sliced

1/2 red onion, diced

2 fresh basil leaves, crushed (I used dried basil instead)

 

Dressing:

1/3 cup extra-virgin olive oil

1/4 tsp cayenne pepper

1 garlic clove, minced

juice of two limes (I used the pre-squeezed organic lime juice)

sea salt and pepper to taste (I personally like lemon pepper)

 

Directions:

1. Place quinoa in sauce pan with two cups of water.  

2. Cover and simmer for 15-20 minutes or unit water is absorbed.

3. Mix dressing ingredients together in a small bowl.  

4. Combine salad ingredients in a large bowl and add cooled quinoa. 

5. Toss with dressing.

6. Chill and serve.

 

 

BLT on Tomato Wrap

 

If you're a BLT lover like me, here's a healthier version made using a raw tomato wrap that tastes even better than the traditional white bread version!

 

Here's what you need:

2 tomato wraps made by "Havit Raw"

4-6 slices of cooked, organic bacon

6 cherry tomatoes 

handful of mixed greens

1 slice of cheese (optional)

1/2 ripe avocado (optional)

Instead of using mayonnaise, I use avocado as a spread.
